Eggnog is so loaded with nutrition that it should be a staple in your refrigerator all year long. You can make it with or without alcohol, cook it, and reduce the amount of calories by different methods. All of the recipes are here, you just have to find the one that is right for you and your family. It would be sad if your children were denied this awesome treat! I have a friend who is allergic to cows’ milk, so she uses goat milk for her eggnog and it is delicious!

Another friend of mine has  adapted one of the recipes for her own use. She uses low fat milk, brown sugar, and cooks the eggs. This fits her dietary requirements and tastes great! During the warmer months she blends fresh berries with the eggnog to give her kids a super boost for the day. They get mad if she doesn’t have enough in the refrigerator to fill them up.

What I’m saying is that eggnog is good for you! Create some today and Happy drinking!

   Are you trying to shed those extra pounds? Are you trying to gain weight? Worried about the amount of calcium and other needed nutrients in your diet? Eggnog recipes can help you get back on track to a healthier more energized plan.

   I started using eggnog in my diet when my doctor told me to lower my blood pressure or have a heart attach. I quit adding salt at the table but my blood pressure stayed high. I began to read the labels on the canned and boxed food that were in my kitchen. I was horrified to find sodium far up the list and when I read the percentages I noticed that I was eating 3 to 4 times my daily requirement. Even the breakfast cereals contain added amounts of sodium.

   You are correct in that you need to eat a healthier more balanced diet, but sometimes time constraints dictate that you take short cuts.  Keeping a pitcher of homemade eggnog in the refrigerator is a quick and nutritious way to honor your body with calcium, protein, many of the vitamins that we need such as vitamin A, B6, B12, folic acid, riboflavin, potassium, iron, plus all the essential amino acids. It is also one of the few natural resources for vitamin D.

    By adding homemade eggnog to my diet I reduced the amount of sodium and my blood pressure began to decrease. One of the side benefits was I also started to lose some weight because I was no longer partaking of quick fix high calorie meals to keep up my energy level. My friends are delighted when I find a new way to use eggnog and you are invited to join us as we explore eggnog recipes.

Eggnog Recipe Variations

This site is dedicated to the year round usages of eggnog. The first two eggnog recipes are concentrated eggnogs that are extremely rich and are suppose to be added to other mediums such as milk, hot coffee or hot water. The first recipe is traditional alcoholic eggnog and the second posting will be a nonalcoholic based cooked egg version for our little friends or pregnant women who should be cautious about eating any products that contain raw eggs. We will be adding eggnog recipes for diabetics and different uses for the eggnog concentrates.

 

This excellent exceedingly rich Eggnog recipe was given to me by my grandmother. It will warm you up from the inside out!

 

Grandma’s Eggnog

10 large eggs

2 cans condensed milk

4 cups sugar

4 packages vanilla sugar (or 5 tablespoons vanilla extract)

1 bottle (a fifth) Brandy

½ bottle Vodka

 

In a blender, or large mixing bowl, cream 5 eggs, sugar and vanilla then blend in 1 can of milk. Slowly add the other 5 eggs, sugar, vanilla and other can of milk. Stir until sugar is dissolved all of the way. Pour into gallon sized container and then stir in the alcohol. Refrigerate immediately in a sealed container, glass gallon jars work best. Stir once a day.

 

This mixture is thick and tends to get stronger as it stays in the refrigerator over several days. 2 tablespoons in a cup of hot water and a dash of nutmeg makes a delightful warming drink for those cool days.

Cooked Eggnog

10 large eggs

3cans condensed milk

4cups sugar

4packages vanilla sugar (or 5 tablespoons vanilla extract)

 

In a large cooking pot mix the 10 large eggs, 2cans of condensed milk and the 4 cups of sugar. If using powdered vanilla sugar you can add it at this time, mix ingredients until the sugar is well incorporated then cook over medium heat stirring constantly until the sugar is totally dissolved and mixture reaches 160 degrees. Remove from heat add vanilla extract and the last can of condensed milk. Refrigerate immediately in a sealed container. Stir once a day.

 

This concentrated eggnog recipe is an excellent choice for children, pregnant women or anyone who wishes to reduce their contact with uncooked eggs and alcohol. Is excellent added to cold or hot milk, hot water and coffee. Top it off with a dash of nutmeg or cinnamon for an additional taste treat.

 

Recipe can be successfully cut in half for small families.

Whitehouse Cookbook Recipe

I found this delightful recipe in a 1915 White House cookbook. I find it appealing to the taste buds to experience the recipes that our forefathers used. We have modernized our food creation to the point of grabbing a boxed meal off the shelf and adding one or two ingredients and calling it a meal. While this is appropriate when in a time crunch, it’s also fun to create from scratch and know that you have added a personal touch to a satisfying feast.  I hope you enjoy this recipe as much as I did. Since this eggnog variation has alcohol in it I would not suggest it to be used by children or pregnant women.

 

Beat the yolk of twelve eggs very light, stir in as much white sugar as they will dissolve, pour in one glass of brandy to cook the egg, one glass of old whiskey, one grated nutmeg, and three pints of rich milk. Beat the whites to froth and stir in last.

Eggnog Freeze

Looking for a healthy way to treat yourself and your family to the great nutrition of Eggnog and still satisfy the urge for great taste? Eggnog freeze satisfies both functions in a great way to enjoy summer eating!

 

½ cup eggnog concentrate or 1 cup low calorie eggnog

1 cup milk

1 and ½ cups berries

 

Put all ingredients in a blender and mix well. Pour into an easily scoopable freezer proof dish and freeze overnight. Scoop out and enjoy!

 

 

If you want a super airy rendition then substitute whipping cream for the milk. This makes a really lightly textured freeze but does add to the calories.

Old Creole Recipe

This recipe offers an old variation on Eggnog. I personally have not tried this one but did find it of interest.

 

Yolk of 32 eggs and thirty two heaping tablespoons of powdered sugar beaten to a froth. Add to this one and half pints of brandy and one half pint of Madeira or sherry wine. To this add one and half quarts of whipping cream; then beat the whites of the eggs to a froth and stir all thoroughly together, the whites of the eggs being added last

This is an uncooked recipe that has alcohol in it so I would suggest that it not be served to pregnant women or children.

Mrs. Lincoln’s Eggnog Recipe

I have added this just as it was presented in her cookbook. I do not take any credit for its use or suitability for consumption. It is an interesting look at how our ancestors used the ingredients at hand in their everyday life!

 

Beat the yolk of one egg, add one tablespoon sugar beat to a cream. Add one tablespoon of brandy or wine, and a half cup of milk. Beat the white of the egg to a froth and gently stir it into mixture. Omit the milk when more condensed nourishment is required or the wine if advised by a physician. It is more palatable when mixed with milk. Whipped cream may be substituted for the milk. In many cases it is desirable to not to have the white beaten to a froth as it causes wind in the stomach.  Obtained from: Mrs. Lincoln’s Boston Cookbook. Eggnog Smoothies

Eggnog Smoothies are a great way to create a quick breakfast or a nutritious energy filled afternoon snack!  This is also an excellent way to help kick our obsession with caffeine.

 

½ cup eggnog of your choice or

  (1/4 cup concentrated eggnog and ¼ cup milk)

¾ cups frozen or fresh berries or banana

 

Put ingredients in a blender and process on medium speed until smooth. Drink up and enjoy this filling energy rich taste start to a healthier diet!

Eggnog Pancakes with Nutmeg Butter

Looking for a scrumptious breakfast that is packed with nutrition? Try our eggnog pancakes with nutmeg butter to get cheers from those picky eaters!

 

In a blender mix:

 

½ cup eggnog concentrate or 1 cup low calorie eggnog

1 cup flour

½ cup low fat milk (omit if using low calorie eggnog)

½ teaspoon baking powder

 

Mix until smooth. Mixture should be able to be poured easily from the pitcher. If slightly thick then add a little more milk.

 

Pour small amounts onto a warm pan tilting pan to move batter into a larger ring. Brown pancakes to a light color flipping pancake when bubbles pop onto top of the cake. This mixture needs to be thinner than most pancakes so that it will move in the pan and cook correctly.

Drizzle with nutmeg butter and enjoy!

 

Nutmeg Butter

Melt butter and add a dusting of nutmeg allowing the mixture to stay warm until used.

Leftover butter can be kept fresh in the refrigerator and rewarmed when needed.
